Homemade Rose Petal Marshmallows

 

Ingredients:

-1 cup rose tea, divided

-3 Tbsp gelatin

-1 cup honey or maple syrup

-1/4 tsp salt

-1 tsp vanilla extract 

-1/2 cup organic powdered sugar

-1/2 cup arrowroot powder

-1/4 cup powdered rose petals 

 

Instructions: 

-Pour 1/2 cup of rose tea into the bowl of a stand mixer (remove the beaters for now) and sprinkle the gelatin on top. Allow the gelatin to bloom for at least 10 minutes.

-While gelatin blooms, add the remaining 1/2 cup of rose tea, honey, and salt to a small pot with a candy thermometer. Heat on medium high and stir the mixture for the first minute only. *Keep a close eye that it doesn't boil over*

-Cook until sugar mixture reaches 240°F. This should take about 12-15 minutes.

-Turn the stand mixer on low to break up the gelatin. Slowly pour the sugar mixture on top. Gradually increase the speed to high and beat until mixture has tripled in size, about 8-10 minutes. Add vanilla extract and beat until just mixed through. It should resemble marshmallow fluff and be cool to the touch.

-While marshmallow mixture is beating, line a 9x9 pan with parchment paper. Stir the powdered sugar, arrowroot powder, and powdered rose petals together in a separate bowl and sprinkle some onto the parchment paper. 

-Pour marshmallow mixture into the pan and flatten the top with a spatula. Sprinkle more rose sugar mixture on top and allow to set for at least 6 hours or overnight. 

-Remove marshmallows from the pan by inverting onto a cutting board. Remove the parchment paper and sprinkle with more rose sugar mixture. 

-Cut the marshmallows into squares and dust with rose sugar mixture as needed to prevent sticking.

-Enjoy right away or store in an airtight container for 1-2 days.

 

My kids and I love to enjoy these medicinal marshmallows on their own or add them to our favorite cacao for a comforting herbal hot chocolate.
